Ahh, this is certainly original. The watch means so much to Edward. Not only is the date they burned down their home etched into it, but it's also rockhard and compelling evidence that he is part of the military.

From a more metaphorical point of view, that is his 'time' that might have been spent doing other things. Maybe the ticking of it sounding off every moment in his life that he had to spend. Time moves even slower looking at a clock, I've realised from many staring matches with the classroom's own.
