I was thinking this throughout the entire movie. What does perfect, spelendid, intelligent, comedic, skilled, compassionate, brave Westley see in Buttercup? And then I realized that he probably had the time of his life helping the girl out, and, just like you said, he loved her for her... ineptness (if that is a word)
