Fanfiction annoyances :
Run-on sentences and giant block paragraphs for no good reason, particularly if right at the beginning of stories where you want to involve the reader rather than scare them off. Lines that include aside comments should also really die; e.g. 'oh how could they thats so awful those monsters!'
Having people 'screaming' things or 'yelling' at any particular revelation, especially when such a reaction is completely out of character and silly. We had quite enough pointless bellowing in OotP. This is particularly prevalent in fics which feature inexplicable piles of inheritances for Harry that are revealed to various characters not previously in the know.
Improper capitalization (particularly in blatantly obvious spots such as names and places), grammar abuse, misspelling common fandom words, and so on. Moony, not Mooney; Apparition, not Apparation; Privet Drive, not Private Drive, and so on. Particularly awful if it involves names. (Thus no Virginia Wesley, Hargrid or Harold Potter.)
Any fic that has a summary that starts off with a description of a beautiful OC witch that captured someone's heart. Really it doesn't matter what else it says, given that's pretty much a guarantee of the next point:
A brand new female OC that is center-stage in the summary and story in general, and inexplicably has to be the One True Love for a main character, generally Severus Snape. The only ones I've yet to see pulled off properly are AU fics in which Snape's path is diverted from the darker parts early on. The silly I-shall-redeem-thee types of most other fics tend to be blatantly Mary Sue or Self Insert.
Teacher/Student relationships while both are still in school that go way beyond accepted boundaries. Mostly Hermione and Snape. Even if the two were to end up together in a fic (admittedly a hard sell for me but conceivable) I hardly think that either of the two would find it appropriate to do this while still student and teacher - given the lifespan of wizards and witches, later marriage wouldn't be out of the question, after all.
Blatantly OOC characters, though mostly focused on those characters that have most to suffer from it. Harry's character may be able to take a wide variety of circumstances, but Snape's certainly does not; Snape may be courteous or even polite, but one isn't going to make the man into a weepy wreck within a few chapers, nor make him change his habits on a whim. Please respect the character and let them keep their quirks, however awful some of those are.
Slavery fics. Seriously, the wizarding world may be ass-backwards, but it's hardly a place where people are enslaved or kept with collars - the worst you can accuse them of is treating the house-elves poorly, since it doesn't seem like the wizards themselves are doing any of the enslaving there. (The elves seem quite put out if without work, save one.)
Crack pairings. This includes silly things like Draco/Ginny (really?) and Voldemort/Harry (without an awfully good AU excuse), not to mention most any Snape pairing (without an awfully good backstory.) Sure, these might be generally accepted pairings in fandom but they're entirely implausible given canon.
Characters reading the books fics. I don't really see the point since we already know these books, and the character comments tend to be decidedly uninteresting and bland.
Inappropriately timed lemons in the middle of a perfectly good story. Yes, fine, they're involved sexually. There's really no need to write out entire sexual scenes every chapter, if they're not somehow contributing to the story. No problem with the content itself necessarily, but it really doesn't add much.
AU or timetravel fics that inexplicably railroad the characters to the plot of the original books. If you're going to fundamentally alter the HP world, events in it, or what certain people are capable of, at least be sincere and follow it through. You might want to stick to some of the main threads - for example, Voldemort's attempted abuse of the Triwizard tournament or his horcruxes in general - but there's no excuse for sticking extremely close to canon, even if the characters are attempting to preserve the timeline. The butterfly effect should make things interesting.
Inconsistent use of time-travel. Within the HP-verse, it appears time travel works via closed time loops, in which one can't alter the past in any sense, since the alteration itself is already part of the timeline before one would even go back. This invites a joyful collection of paradoxes, of course, but those should be interesting to get into. It can be used to great effect. In my own fic, I use timetravel as a strictly one-way journey - into the past - and one must take the Long Path back to the current time; e.g. by living it. There is one significant exception related to the Department of Mysteries itself, but that place is where you expect things to be weird. :P
