Pairings:

Yu-Gi-Oh!: Um...just about every slash pairing under the Domino sun...'cept for incest or with minors. Don't like that. And Joey/Mai. I go for that, too.
Yami/Hikari pairings (including Seto/Jou), Bakura/Seto, Bakura/Yami, Bakura/Seto/Joey (it's new, it's not quite out there yet, GO FOR IT!), and Bakura/Marik (the yami) are my favorites, though (but I'm very open-minded--as long as you can make it work).

Phantom: I like Erik/Christine and Erik/Raoul (has to be well-written) the best, but I'll also go for Erik/Antoinette (Madame Giry)

Golden Sun: Isaac/Jenna, Felix/Sheba, Jenna/Saturos, Saturos/Menardi, Garet/Jenna (sometimes), and just about every slash pairing. Favorites include Alex/Felix, Felix/Picard, and Picard/Alex.

Harry Potter: Harry/Ginny, Ron/Hermione (sub-pairing only), Hermione/Draco, Hermione/Severus, Sirius/Remus, Harry/Draco, Harry/Severus, Voldemort/Harry (generally non-con, mostly Sadademort's work; all hail the awesomely awesome Sadademort)

Fruits Basket: Um...Sohma orgie! sweatdrop
Yuki/Kyo, Yuki/Haru, Kyo/Kagura, Kyo/Tohru, Yuki/Tohru, Shigure/Hatori, Shigure/Aya, Shigure/Hatori/Ayame (fear the Super Handsome Blossom Trio)

...If there's anything else, it's on a case by case basis. Make it good, and I'll probably like it. PaisleyRose, for example, has a wonderful Jareth/Jeremy odd thing going on in her fic "The wished away child", but I'm not sure how many other people could pull that off.

a work-in-progress Bakura/Seto one-shot set back in Egypt,
