Midi-chlorians don't grant force potential, instead they are drawn to it like moths to a flame. If all Anakims midi-chlorians died, his force potential would not decrease. Though I'm no expert on this part of Canon, it makes a pretty big difference since some people assume not having midi-chlorians would make you immune to the force.
