I actually think your take on arithmancy is what the subject originally was. When it first started, Hogwarts disguised itself as a really upper-class muggle school. What would people learn at muggle schools? Math. After all, what would be a better way to disguise magic? As time went on, I’m almost positive that it changed into what it was now. This would also explain why Hermione was so interested in it. Maybe she found an older arithmancy textbook and was enthralled by it, thinking the class itself was like that. My personal take on arithmancy is that it’s a way to identify the magical properties of numbers. So yeah. I think your take would be what it originally was before pro-magic people came in and ruined it.
