Alright so here is the best of the best series I have read in no particular order with a short description. I'll add to this as I find new things, and I hope people that enjoy my work will check these out if they fit your fancy.
Full Metal Alchemist
This work is seriously amazing. It tells a story of two brothers who delve into Alchemy. The story is stupendous. Basically the brothers search for a philosopher's stone in order to bend the law of equivalent exchange to right a wrong from their past. Their quest however brings them into the heart of a much larger conflict that decides he fate of the world as a whole. There are two series with the one called Brotherhood following the manga storyline while the other diverges.
This one is really good. It is about an ambitious individual that basically ends up on a quest to conquer the world and reshape it into a better one. He receives a power that allows him to order anyone to do anything he wants them to, but the catch is it only works once. This is also a mobile suit anime, so there is a good bit of action.
Completely different from the previous two action series. This one defined the slice of life genre and follows a delinquent individual who has a kind heart as he desperately searches for a meaning to his life during his last year of high school. He begins to get involved with different people who change who he is. Warning though, this one gets really emotionally involved and sad, but that is a testament to how well this series is made. It is beautiful.
The Hitchhiker's Guide
This one is a book, but this pretty much defines nerds. Chalk full of hilarity and nonsense that it radiates pure awesomeness. I won't tell you anything about the story because it would just confuse the hell out of anyone reading this, but if you ever wanted to cut loose and delve into science fiction, this is your read. The full name of the first book in this series by Douglas Adams is The Hitchhiker's Guide to the Galaxy. And don't watch the movie. Please.
Mobile Suit Gundam 00
There are numerous arguments about which is the best Gundam series, but my vote goes to this one. It manages to tell a very intresting over arching tale while still developing a good number of characters. Plus it is set in an alternative universe from all the other Gundam series so you can go in blind. The plot involves a private organization that come out with Gundams saying they will use lethal force to end all war on the planet.
Tengen Toppa Gurren Lagaan
Also a classic, though honestly there is something very interesting about it. This series is heavy on action and ridiculousness to the point of insanity. There is also a lot of fan service thrown around and it really never takes itself seriously. Despite all this however, it has some of the best main characters I have ever seen. Simon and Kamina. And it tells an excellent story despite its initial look. Its weird. Its fantastic but weird. If chucking galaxies at giant robots is your thing, kick logic to the curb and watch.
I had my doubts when I started watching this, but it blew me out of the water. This anime probably has some of the best pacing I have ever seen. It has a perfect length too, and the story it tells is very tight knit. The story revolves around a self proclaimed mad scientist college student who creates the Future Gadget Laboratory, and then accidentally develops a microwave that can send text messages into the past. The catch? When everything in the world changes, all memories are overwritten that don't go with the altered timeline. The main character is the only one that can retain memories after each shift.
