The general order of things:

MASS EFFECT

MIND OVER MATTER is the story of Johnny Shepard, vanguard, formerly an adept before losing the majority of his powers. Born on Mindoir and barely escaped with his life in the destruction of the colony. Known for the gruesome events on the moon Torfan. The Butcher. These stories are slightly AU for reasons you will discover. Some of them: John wasn't the Alliance's first choice for human Spectre, only that the Hero of the Blitz met an untimely end and the Survivor of Akuze was shut away in a mental hospital... from which she has mysteriously escaped. John was trained by a turian host family after Mindoir. And he lost his sister in the batarian raids.

Mind Over Matter is kind of a foundation story you can jump off from there. You don't need to read it to enjoy anything else, but the others follow loosely:
