Here you can find my music taste, status of my stories, and best of all...my recipe for simple, delicious honey-wine, Mead.
!SIMPLE HONEY-WINE RECIPE!
You will need
10-litre bottle of a spring water,
3-kilograms of pure honey or more,
one sachet of champagne or wine yeast,
a fistful of untreated raisins
and a baloon for an airlock.
WARNING: do not use tap water! It will kill the yeast, so will processed honey. Everything must be pure. Bottles can explode if you bottle it too soon.
Pour 40% of the water out of spring water bottle, if you can't reserve it, because there wont be room for the liquified honey if you don't.
step 1: Put all of the honey in a clean stockpot with a big splash of spring water and heat until it's too hot to touch, but not boiling.
step 2: funnel all of the hot liquified honey into the spring water bottle.
step 3: wait until cool and then pour in your wine yeast and raisins.
step 4: poke a hole in the top of a party balloon and strewtch it over the opening of the bottle.
Wait for a month, or when the balloon goes limp, then bottle it. Try to bottle it in glass flagons wiht splastic lids, because if it hasn't stopped fermenting and preassure builds up, the top will pop off before the bottle explodes. Make sure you strain the mead of pulp and yeast particules as you bottle it. WHen the mead is a clear color, you can drink it, takes 6 months maximum. THe baloon wiht oxcidize and crack over time, so keep replacing it fortnightly.
Do NOT leave out the raisins. THey are there as yeast-food so the femrentation goes smoothly. They're vital.

Alternatively, you can boil up all of the spring water at once and ad a couple of tea bags, and a spoonful each of ground cloves, nutmeg and cinemon ground to make it an even sweeter wine. EVen ad a few fistfuls of pure brown sugar. Make sure you cool it down before you ad the yeast and raisins though! EVery solid substance, like sugar crystals, should be fully disolved before you turn the stove off.
